Baking with sugar substitutes

An easy way to cut back on calories without feeling deprived is to cook or bake with artificial sweeteners. You can cut 360 calories from a cake recipe that calls for 1 cup of sugar by using an artificial sweetener in place of half of it.

 

Beyond sweetness, sugar contributes functionality to baked goods. Sugar provides physical properties such as bulk, structure, moisture, tenderness and browning. Due to these properties, replacing sugar in baked goods can be tricky. The most difficult recipes to replace sugar are cookies, cakes, muffins and brownies. Start by replacing half of the sugar with a substitute, and if the food doesn't brown correctly or is too heavy in texture, increase the sugar-to-sweetener ratio. Most substitutes can’t do what sugar can do in baked recipes, so use recipes designed for the substitute of your choice.

 

SWEET ONE (Acesulfame-k)
4 calories per packet 12 packets = 1 cup sugar 1 packet = 2 teaspoons sugar

EQUAL / EQUAL SPOONFUL (Aspartame)
4 calories per packet or 2 calories per teaspoon 24 packets = 1 cup sugar or
1 cup Equal Spoonful = 1 cup sugar
1 packet = 2 teaspoons sugar or 1 teaspoon = 1 teaspoon sugar
Loses sweetness when baked at high temperatures for a long time. Use recipes developed for this sweetener. When beating Equal together with margarine, butter or eggs, add the Equal last to avoid separation. Baked products made with Equal are best stored in the refrigerator in an airtight container. Cookies made with Equal tend to be softer and cakes tend to be harder than their sugar-made counterparts. Baked goods made with Equal may bake more quickly than if made with sugar. TRUVIA (Stevia)
0 (zero) calories 24 packets = 1 cup sugar
1/3 cup + 1½ tbsps. = 1 cup sugar
1 packet = 2 teaspoons sugar
Can be used in cooking or baking without losing sweetness. Lower oven temp by 25-50║ and increase baking time by 5-10 minutes. It’s best to combine least 1/4 cup of sugar with this substitute for a quality product. For crisper cookies, add 1-2 tablepoons of cornstarch to dry ingredients. For recipes, contact Truvia.com
SPLENDA (Sucralose)
0 (zero) calories 1 cup = 1 cup sugar 1 teaspoon = 1 teaspoon sugar
May not work well in recipes such as certain cakes that rely upon sugar for structure. Finished recipes may require refrigeration. Substitute half a cup of SPLENDA« Sugar Blend for every full cup of sugar required in a recipe. Cookies may spread less when using SPLENDA« Sugar Blend. Visit Recipes.splenda.com for recipes.

BROWN SWEET 'N LOW (Saccharin)
20 calories per teaspoon 4 teaspoons = 1 cup brown sugar 1 teaspoon = 1/4 cup brown sugar
