Yield: Makes 12 servings
- 2 medium cucumbers, chopped
- 2 medium tomatoes, chopped
- 1 jalapeņo pepper, seeded and minced
- 2 cloves garlic, minced
- 1 lime, juiced
- 1 bunch cilantro, minced
- 1 tablespoon apple cider vinegar
In a medium bowl, stir together ingredients. Cover and refrigerate for 1 hour.
