Yield: Makes 1 sandwich

 

Ingredients

  • 2 large eggs, hard-boiled, chopped
  • 1 tablespoon diced celery
  • 2 tablespoons diced red pepper
  • 1 tablespoon plain Greek yogurt or light mayonnaise
  • Salt and freshly ground pepper to taste
  • Dash of paprika
  • 2 slices wheat bread
