Pineapple Cucumber SaladPineapple Cucumber Salad

Yield: Makes 6 servings (1/2 cup)

 

Ingredients:

  • 1 pineapple chopped
  • 1 medium cucumber
  • 2 limes
  • 1/3 cup cilantro
  • Salt and pepper to taste

 

Preparation:

  1. Combine pineapple, cucumber and cilantro.
  2. Cut limes in half and squeeze juice over salad. Toss and chill before serving.

Fiber: 0.5g
