Pineapple Cucumber Salad

Yield: Makes 6 servings (1/2 cup)
- 1 pineapple chopped
- 1 medium cucumber
- 2 limes
- 1/3 cup cilantro
- Salt and pepper to taste
- Combine pineapple, cucumber and cilantro.
- Cut limes in half and squeeze juice over salad. Toss and chill before serving.
