Stuffed Bell PeppersStuffed Peppers

 

Equipment:

  • Pan
  • Knife
  • Measuring cup
  • Bowl
  • Spoon
  • Fork
  • Microwave-safe dish

 

Ingredients:

  • 1 cup brown rice
  • 3 ears of corn
  • 1½ cups chunky salsa
  • 4 large bell peppers, top and seeds removed
  • 1 cup shredded cheese

 

What to do:

  1. In pan, make rice according to package directions.
  2. Cut corn off cob and mix in a bowl with cooked rice and salsa.
  3. Poke each pepper 3 times with a fork. Place peppers in a microwave-safe dish and fill with corn mixture. Cover and cook for 10 minutes.
  4. Sprinkle with cheese.
