Stuffed Bell Peppers
- Measuring cup
- Microwave-safe dish
- 1 cup brown rice
- 3 ears of corn
- 1½ cups chunky salsa
- 4 large bell peppers, top and seeds removed
- 1 cup shredded cheese
What to do:
- In pan, make rice according to package directions.
- Cut corn off cob and mix in a bowl with cooked rice and salsa.
- Poke each pepper 3 times with a fork. Place peppers in a microwave-safe dish and fill with corn mixture. Cover and cook for 10 minutes.
- Sprinkle with cheese.
