I had my pressure canner dial-gauge checked and it read one pound high. Do I need to replace it?

We recommend replacing gauges that read high by one or more pounds. Low readings will cause food to be over-processed and may also mean your gauge is unpredictable, so we recommend replacing low reading gauges too. Replacement gauges and other canner parts are usually available at stores where canning equipment and supplies are sold. It's a small price to pay for safe food. Note: Be sure and have your new gauge tested before use.
