What could happen if a pressure canner is not vented properly?


If a pressure canner is not properly vented, pressure would fluctuate during processing. This would result in a loss of liquid from the jars. Air could also remain in an improperly vented canner. This air would prevent the attainment of proper temperatures throughout the canner, and could cause under-processing of some jars.
