Can food be reprocessed if it was incorrectly processed or if lids failed to seal?
If no more than 24 hours have gone by since the food was processed, do one of the following: 1) Refrigerate the food and use it within two days. 2) Freeze the food. Drain vegetables before freezing. 3) Remove the lid and check the jar-sealing surface for tiny nicks. If necessary, change the jar. Always use a new, properly prepared lid and reprocess using the same processing time. The quality of reprocessed food is poor. If more than 24 hours have passed since the food was processed, discard it. Toxin produced by Clostridium botulinum may already have begun to form.
