Do root crops like potatoes, beets and carrots have to be peeled before canning?
Yes. Because of the texture of their outer layer (peel), they have a heavy load of micro-organisms from the soil, including Clostridium botulinum. Peeling and several washings in new water help reduce this microbial load.
