Don't you think it would be okay for me to go ahead and use the old canning guidesheets (before 1989)? No one has gotten sick yet?
Your safety is our primary concern. Our old canning guidesheets were based on the best scientific research available at that time. Now we have new research, done by USDA (September 1994), and it has resulted in many changes in canning recommendations. It would not be right for us to advise you to go ahead and use old directions that may not be safe. For the safest and best quality products possible, use the new guidelines. If you decide on your own to use old recommendations, we cannot assure you that your products will be safe.
