I have no boiling-water canner. Can I use my pressure canner, unsealed, for a boiling-water canner?


It is not a good idea to use a pressure canner with a dial gauge as a boiling-water canner. There is a good possibility that water could splash up and get into the gauge causing it to register inaccurately. The canner body of a dial-gauge pressure canner could be used with a different lid. A pressure canner with a weighted gauge may be used, unsealed, as a boiling-water canner if it is deep enough. Be sure to remove the gasket (sealing ring) and do not lock the cover to prevent any pressure build up.
