Can cantaloupe be canned?
There is no scientifically researched time established for canning cantaloupe. In addition, the quality of canned cantaloupe is very poor, i.e. mushy texture and cooked flavor. An excess of cantaloupe can be frozen using the directions in GH 1502, "Freezing Fruit".
