When should pears be picked for processing?

Tree ripened pears have a coarse, gritty texture when canned. It is best to pick pears to be used for processing when they are full size, but firm (green). Hold them for two weeks at refrigerator temperature, 35 to 40 degrees F. Then allow pears to ripen at room temperature.
