Is the blending of tomatoes in a blender an acceptable way to make tomato juice?
The use of a blender to make tomato juice is not acceptable. Blending raw tomatoes permits the rapid breakdown of pectin, a substance responsible for keeping tomato juice from becoming thin and separated. It also incorporates air into the juice, encouraging the oxidative destruction of vitamin C.
