Should I freeze pie crust baked or unbaked?
Both baked and unbaked pie crusts freeze well. Baked pie
crusts will break less if wrapped and frozen in their
pans. Unbaked crust is most successfully frozen by
rolling out to desired size and stacking on heavy
cardboard cut to the same size, and covered with waxed
paper. Place two sheets of wax paper between each crust.
To use uncooked pastry, remove one or more crusts and
let thaw for 15 minutes. Leave the waxed paper above and
below each crust while it thaws. Two crust pies are best
frozen unbaked so that the bottom crust does not become
soggy. To minimize sogginess, brush the bottom crust
with melted shortening before adding the filling.
