Fruits that I have frozen become soft and mushy when thawed. How can I prevent this?

Frozen fruits usually do lose their shape very quickly when thawed. Because of their high water content, fruits have cell wall damage from ice crystals that form during freezing. There is no way to prevent this. If the frozen fruit is being served as you would fresh fruit then serve while it is still partially frozen. That will help it maintain its shape.
