How should I freeze roasts?

Trim away excess fat. Wipe meat with a clean, damp cloth. Pad protruding, sharp bones with fat or with extra wrapping so they cannot pierce the package. Package individual roasts tightly in sheet wrapping, using either the butcher wrap or the drugstore fold. Label and freeze.
