How long can I hold vegetables before freezing them?

It is best to prepare and freeze vegetables as soon as possible after they are picked. If you must hold them, keep them refrigerated. In research done at Pennsylvania State University, peas held four hours at room temperature before blanching lost 50 percent of their sugar content.
