Why did the fresh mushrooms that I froze turn black when thawed?

Mushrooms must be blanched in boiling water or steam, or they can be sauteed in butter before freezing. The cooking inactivates the enzymes that cause color and texture changes. Lemon juice or citric acid in the blanching or steaming water also helps prevent darkening. Refer to GH 1507, "Freezing Unusual Fruits and Vegetables," for directions.
