Quick Answers

Can I freeze raw tomatoes?

Tomatoes that are frozen raw become watery and develop off-flavors after a short period of freezer storage. Tomatoes that are too ripe for safe canning, but still sound and free from decay, can safely be frozen. Directions are given in GH 1503, "Freezing Vegetables."
