How do you dry herbs?
Garden herbs may be dried and stored for use during the winter. Choose clean, young, tender leaves. Wash them in cold water, drain, and blot dry with paper towels. Arrange herbs on shallow trays and cover with a single layer of cheese cloth. Place them in a dry, shady place until the leaves are so dry that they crumble when handled. Or, leafy stems may be tied in bunches, put in a paper bag punched with holes, and hung in a well-ventilated, dust-free room to dry. Or herbs may be dried in a microwave oven.
