How should jerky be stored?

Finished jerky can be stored at room temperature in airtight containers if the jerky is dry enough. If there is excess moisture, it will become moldy. If there is too much fat, it will turn rancid more rapidly. For safety, increased shelf life, and better flavor retention, store home-prepared jerky in an airtight container in refrigerator or freezer.
