Quick Answers

What is conditioning?

Conditioning is the process which evenly distributes the moisture left in food after drying. It is usually done to fruits, herbs and seeds because it decreases the chances of spoilage, especially by molds. To condition a food, refer to GH 1562 "Drying Foods" for directions.
