How long do foods take to dry in a kitchen oven?

Vegetables, prepared and spread on drying trays, require up to 8 hours to dry in an oven. Fruit leathers take 4 to 5 hours. Beef jerky requires about 11 hours. The drying times for fruits are too long for oven drying to be recommended. Never dry sulfured or sulfite-dipped fruits in the oven because the sulfur dioxide fumes can be irritating.
