I have heard that liquid pectin contains sulfite and that it might cause problems for people with asthma. Is this true?


You are correct. Asthmatics need to be aware that liquid pectin does contain sulfite which can produce a severe allergic reaction in some people, usually asthmatics. If this is a problem for you, it's best to use powdered pectin.
