I had several boxes of pectin left this summer. How can I keep it fresh for next year?

It's best to purchase new pectin each season because using old pectin can result in a weak gel formation. If you decide to save your pectin, store it in moisture-vapor-proof containers in the freezer. This only applies to powdered pectin.
