Can uncooked, or freezer jam be made without sugar?

If a special low methoxyl pectin product, such as Mrs. Wages Light Home-Jell (TM), is used, freezer jam can be made without any sugar, with reduced sugar or with an artificial sweetener.


Directions are:

3 cups crushed fruit

1 box Mrs. Wages Light Home-Jell

1 cup water

Measure 3 cups of crushed fruit at room temperature into a bowl and set aside. **Note: If artificial sweeteners are to be used, stir them into the crushed fruit. Stir Light Home-Jell thoroughly into 1 cup of water in a saucepan. Bring to a full boil, stirring constantly to prevent sticking and scorching. Immediately stir into crushed fruit. Stir thoroughly, about 3 minutes. Pour into freezer containers and refrigerate. After jam has set (about 2-3 hours), seal tightly and freeze. Yield: 4 1/2 pints.
