Is zucchini apple butter or zucchini jam a safe product?

At present, there has been no research to determine the safety of these products or to establish a processing time. Because they are made with a low-acid vegetable rather than acid fruit, they may not be acid enough for safe processing in a boiling-water canner. If made, these products should be stored in the refrigerator and used in several weeks or in the freezer and used in several months.
