Where can I find recipes for pickles made without salt?
Fresh pack pickles can be made without salt. However,
the quality of salt free pickles is poor. Recipes for
reduced-sodium sliced dill pickles and sliced sweet
pickles are in the "Complete Guide to Home Canning," Ag.
Information Bulletin No. 539, which can be found on the
National
Center for Home Food Preservation website. Both
texture and flavor may be different. Make a small
quantity first.
Caution: The salt used in making fermented and
brined pickled products is vital to safety as well as
texture. Do not attempt to reduce or eliminate salt in
these recipes.
