Can I use brown sugar, corn syrup or honey in pickling fruits and vegetables?


Although white granulated sugar is most often called for in pickling recipes, brown sugar may safely be substituted measure for measure. White sugar gives a product a lighter color. Corn syrup and honey, unless called for in reliable recipes, may produce undesirable flavors.
