Quick Answers

Why should cucumbers be soaked in salt water when making bread and butter pickles?

Some fresh pack pickles should be soaked for a few hours or overnight in brine (salt water). This short brining procedure draws water out of the vegetables, thus enhancing their ability to take in the pickling solution. This results in a firmer pickled product.
