I canned my pickles by the open kettle method. Are they safe to eat?
We cannot recommend eating any food that is canned by the open kettle method. Such food could be dangerous. If you decide to consume the food anyway, check carefully for evidence of spoilage when you open the jars (for example - spurting liquid, mold, off odor, mushiness, slipperiness). In the future, process your pickles in a boiling-water canner.
