How do you pickle fish?

Fish are an extremely perishable food, and therefore, very dangerous from a food safety standpoint. For this reason, it is very important that scientifically-based procedures be used to prepare pickled fish, such procedures can be found in the Pacific Northwest Extension publication, "Fish Pickling for Home Use." Please note, fish that have been pickled MUST be stored in the refrigerator.
