What caused my homemade sauerkraut to be soft?


Softness in sauerkraut may result from:

 

  • insufficient salt
  • uneven distribution of salt
  • too high temperature during fermentation
  • air pockets caused by improper packing in jars

 

Do not eat soft kraut.
