How do I safely marinate meats?
Always marinate meats in the refrigerator. If left at
room temperature, bacteria will grow more rapidly. The
marinade does not kill the bacteria and is not as
effective as refrigeration in slowing bacteria growth.
Remember to discard the marinade after use. It contains
raw juices from the meat that contain harmful bacteria.
