What does the grade mean when purchasing beef?
USDA graded beef is Prime, Choice, and Select. Lower
grades are used for ground and processed meat products.
USDA Prime beef has more fat marbling and is the most
tender and flavorful and higher in fat. USDA Choice and
Select are the grades most commonly sold in
supermarkets.
