How do you safely prepare beef?

 
If you are going to prepare the beef within 3 to 5 days, refrigerate at 40F. Otherwise freeze the beef. It can be frozen in its original packaging, or if it will be frozen for a long period of time, wrap the package with foil or freezer paper to prevent freezer burn. Defrost beef as you would any meat product: in the refrigerator, in running cold water, or in the microwave. Never defrost beef on the counter. Cook hamburgers and ground beef mixtures to 160F. Steaks and roasts may be cooked to 145F (medium rare), 160F (medium), 170F (well done).
