How do you safely prepare beef?

 
If you are going to prepare the beef within 3 to 5 days, refrigerate at 40°F. Otherwise freeze the beef. It can be frozen in its original packaging, or if it will be frozen for a long period of time, wrap the package with foil or freezer paper to prevent freezer burn. Defrost beef as you would any meat product: in the refrigerator, in running cold water, or in the microwave. Never defrost beef on the counter. Cook hamburgers and ground beef mixtures to 160°F. Steaks and roasts may be cooked to 145°F (medium rare), 160°F (medium), 170°F (well done).
