How do you prepare ratites?
Ratite meat is best when lightly grilled, pan fried, or
roasted. Be careful not to overcook because the low fat
content may make the meat tough. Cook ratite to an
internal temperature of 145°F (medium rare) to 160°F
(medium). Always cook ground meat to 160°F.
