Quick Answers

How long can you leave coconut frozen and it still taste fresh?

Fruits that have been frozen can be stored in the freezer for 8-12 months before quality, such as flavor, is affected.

The National Center for Home Food Preservation website, http://www.uga.edu/nchfp/, has a section about storing frozen foods that you might find helpful: http://www.uga.edu/nchfp/how/freeze/freezer_shelf_life.html.

Also, the book based on the above website, So Easy to Preserve, contains information about storing commercially frozen foods and lists a maximum storage time of 12 months for frozen fruit.
